Jack 'O Lantern Quesadillas

Need something festively fun yet extremely simple? You know we are all about both of those, so we decided to share this fun little recipe for Jack 'O Lantern quesadillas, Chick 'N Skin style!

Ingredients
2 cups shredded chicken
1 tbsp lime juice
½ tsp chili powder
½ tsp garlic powder
8 medium flour tortillas
1 cup shredded cheddar
1 cup shredded Monterey Jack (or pepper Jack, which ever you prefer)
1 tbsp olive oil
5-7 large pieces Chick 'N Skin – either Original, Salt & Pepper, or Tom Yum flavor - crushed
Salsa for serving

Cookware You'll Need
Cooking spray
Cooking/baking sheet
Mixing bowl
Knife

Recipe
Heat your oven to 425. Spray large cooking sheet with spray. In a mixing bowl, place chicken, lime juice, chili powder, garlic powder and mix well. Using a paring knife, cut out the Jack 'O Lantern shapes in half (4) of the tortillas. Assemble the quesadillas by placing the bottom tortilla down on the baking sheet, then putting on both types of cheese and the chicken mixture, adding on the Chick 'N Skin pieces toward the top. Top with the Jack 'O Lantern pieces. Brush with oil and bake until the cheese is melty and the tortillas are golden brown, which is around 15 minutes. Serve with your favorite salsa.
