Cauliflower Mac N Cheese Casserole

For those looking for a new recipe that is low carb and still tastes amazing, here is one of our new favorites. Don't let the name fool you, there is no noodles or starchy carbs involved in this amazing dish.

Ingredients
1 large head of cauliflower, cut into small parts of florets
1 cup heavy cream
2 oz cream cheese, cut into small pieces
1 ½ tsp Dijon mustard
1 ½ cup shredded cheddar cheese – separated into 1 c and ½ c measurements
Salt – to your taste
¼ tsp black pepper
1/8 tsp garlic powder
Salt & Pepper Chick N Skins – crumbled, about 4-5 larger pieces

8x8 inch baking dish
Pot
Saucepan

Recipe
Heat oven to 375, spray your baking dish with non-stick spray, and bring pot of water to a boil. Place salt in the boiling water. Boil the cauliflower until it's tender, it should take about 5 minutes or so. Drain and pat dry. Put cauliflower in baking dish and put to the side. Bring the heavy cream to a simmer in a saucepan and then whisk in the cream cheese and the mustard until smooth. Now stir in 1 cup of the shredded cheese, pepper, garlic, and salt (to your taste) and whisk until the cheese is melted. This will only take about a minute or so. Remove from heat and pour over cauliflower in baking dish and stir until everything is combined. Top with Salt & Pepper Chick N Skin crumbles and then the remaining cheddar cheese. Bake about 10 minutes, until cheese on top is bubbly and light golden brown.
