BBQ Bacon Baked Nachos

Nachos are just a staple at any football get together or game day party and sometimes they can get a little boring. We here at Chick N' Skin are always trying to come up with new ways to liven up everyone's favorite nacho recipes. So, here is our recipe for baked nachos that use our BBQ Bacon Chick N' Skins.
Ingredients
2 bags BBQ Bacon Chick N' Skin
2 cups shredded chicken (fully cooked – we prefer rotisserie chicken for this recipe)
¾ cup barbecue sauce plus about ¼ cup for drizzling
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
¼ c sliced jalapenos
1 tbsp virgin olive oil
3 green onions, chopped
½ cup chopped red onion
Salt
Black pepper
Cookware You'll Need
Large baking sheet with high rim – lightly coated with non-stick spray
Skillet
Recipe
Heat oven to 350 degrees. Spread BBQ Bacon Chick N' Skins along the bottom of a large, high rimmed baking sheet. In skillet, heat oil over medium heat. Add in red onion and season to your tastes with salt and pepper. Saute until onions are soft, usually about 5 minutes, then stir in chicken and BBQ sauce. Cook until chicken is heated through. Turn off heat and spread chicken and BBQ mixture on top of Chick N' Skins on the baking sheet. Top mix with both types of cheese, green onions and jalapenos. Bake about 10-12 minutes, or just until cheese is melted well. Drizzle with BBQ sauce if desired and enjoy!
